  1. Honeywood Meatballs
    Prep: 25 min. Bake: 15 min.

    Ingredients
    4 eggs
    1 1/2 cups milk
    2 cup dry bread crumbs
    1 1/3 cups finely chopped onion
    1 tablespoon salt
    4 pounds PVR ground beef
    6-8 minced garlic cloves
    2 tablespoons butter
    1 1/2 cups ketchup
    1 cup local honey
    3 tablespoons soy sauce

    Directions

    Get your largest bowl and combine the eggs and milk. Mix in the bread crumbs, onion
    and salt. Make sure the beef is at room temperature and then crumble it over the mixture. Stir with a heavy wooden spoon or mix by hand. Roll 1-inch balls from the mixture and place on oiled racks in shallow baking pans. Bake uncovered, at 395° for 11-14 minutes.

    Saute the garlic in butter until tender.
    Stir in the ketchup, honey and soy sauce. Boil and then immediately reduce the
    heat, cover and simmer. Drain the meatballs and add them to the sauce.
    Cook for another 10 minutes while stirring to make sure all the meatballs get covered in sauce. This recipe makes about 10 dozen meatballs. Seal the leftovers in jars – they freeze well for spaghetti suppers or a snack during the hockey game!
